Summer Seafood salad

Why not take this Classic Caesar salad and add a Seafood Stick twist!
The perfect combination of crunchy lettuce and our Vici Classic Seafood Sticks makes a delightful lunch in the sunshine.
Ingredients
For the salad:
- 150g Vici Classic Seafood Sticks
- 150g Lettuce washed and drained
- 1 large well-ripened avocado sliced
- Parmesan cheese shredded or shaved
- Juice of 1 Lemon
For the croutons:
- 4 slices of white bread
- 2 tbspn olive oil
- 1 tbspn dried herbs
- A pinch of salt & pepper
For the Caesar sauce:
- 4 tbspn mayonnaise
- 1/2 tsp dijon mustard
- 1 garlic clove
- 2 anchovy fillets
- 1 tbspn lemon juice ;
- 1 tbspn Worcester Sauce
- A handful of grated parmesan
- A pinch of salt and pepper
Preparation

Preheat the oven to 180°c (fan).

Cut the bread slices into cubes and mix in a bowl with the oil, herbs, salt & pepper.

Place on a baking tray and cook for 10 minutes or until golden.

Add all the sauce ingredients into a blender and mix well.

Cut the Lettuce and Seafood Sticks into bitesize chunks and place onto a plate .

Sprinkle the lemon juice onto the Avocado and add to the plate

Add the parmesan and croutons

Either serve the sauce on top of the salad or on the side as a dip
