Fried Thai rice with VICI surimi chunks

  • 3 tbsp oil
  • 4 cloves of garlic, minced
  • 2 eggs
  • 2 cups of cooked white rice
  • 1 tbsp soy sauce
  • 1 tsp lemon juice
  • 2 tsp fish sauce
  • 1 tsp sugar
  • Salt & pepper to taste
  • 120g Vici Surimi Royale
  • 1 tbsp spring onion, chopped plus more to serve





Heat the oil in a wok. Add minced garlic and fry for 30 seconds or till they start to turn golden brown.
Now whisk the eggs in a bowl and pour them into the wok. Scramble gently as you go. Once they are mostly cooked, break them into smaller pieces with a wooden spoon.
Then add in the cooked white rice, soy sauce, fish sauce, sugar and a pinch of black pepper. Toss well.
Now add the chopped chunks of Vici Surimi Royale and mix well. Fry for 2 mins, taking breaks from the stirring to allow the rice to toast and develop flavour.
Stir in the chopped spring onion and mix well. Serve with a squeeze of lime and some more chopped spring onion.
