Fried Thai rice with VICI surimi chunks

Ingredients
- 3 tbsp oil
- 4 cloves of garlic, minced
- 2 eggs
- 2 cups of cooked white rice
- 1 tbsp soy sauce
- 1 tsp lemon juice
- 2 tsp fish sauce
- 1 tsp sugar
- Salt & pepper to taste
- 120g Vici Surimi Royale
- 1 tbsp spring onion, chopped plus more to serve

Heat the oil in a wok. Add minced garlic and fry for 30 seconds or till they start to turn golden brown.

Now whisk the eggs in a bowl and pour them into the wok. Scramble gently as you go. Once they are mostly cooked, break them into smaller pieces with a wooden spoon.

Then add in the cooked white rice, soy sauce, fish sauce, sugar and a pinch of black pepper. Toss well.

Now add the chopped chunks of Vici Surimi Royale and mix well. Fry for 2 mins, taking breaks from the stirring to allow the rice to toast and develop flavour.

Stir in the chopped spring onion and mix well.
Serve with a squeeze of lime and some more chopped spring onion.
